Almond Flour Banana Muffins | Healthy, Gluten Free, & Low Carb Banana Muffins

Deliciously moist and fluffy almond flour banana muffins that are healthy, gluten-free, and low in carbs.

Ingredients

  • 2 cups almond flour
  • 2 ripe bananas
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 3 large eggs
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mash the bananas and mix in the eggs, honey (or maple syrup), and melted coconut oil.
  3. In another bowl, combine almond flour, baking soda, salt, and cinnamon.
  4. Mix the wet ingredients into the dry ingredients until just combined.
  5. Scoop the batter into the muffin tin and fill each cup about 3/4 full.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Let cool before serving.

Notes

  • For added flavor, you can mix in chocolate chips or nuts.
  • Make sure to use ripe bananas for natural sweetness.
