- 2 cups almond flour
- 2 ripe bananas
- 1/4 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 3 large eggs
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a bowl, mash the bananas and mix in the eggs, honey (or maple syrup), and melted coconut oil.
- In another bowl, combine almond flour, baking soda, salt, and cinnamon.
- Mix the wet ingredients into the dry ingredients until just combined.
- Scoop the batter into the muffin tin and fill each cup about 3/4 full.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- For added flavor, you can mix in chocolate chips or nuts.
- Make sure to use ripe bananas for natural sweetness.
