  • 4 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda

  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a bundt pan.
  2. In a saucepan, boil the apple cider until it reduces to 1 cup.
  3. In a mixing bowl, cream the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. In another bowl, combine the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the reduced apple cider and vanilla.
  7. Pour the batter into the prepared bundt pan.
  8. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let cool for 10 minutes before inverting onto a wire rack.
