  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar
  • 3 packages (8 oz each) cream cheese, softened
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup apple cider
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
  3. In a large mixing bowl, beat together sugar and cream cheese until smooth.
  4. Add vanilla extract and mix well. Gradually add eggs one at a time, blending after each addition.
  5. Stir in apple cider, ground cinnamon, nutmeg, and salt until well combined.
  6. Pour the cheesecake batter over the crust in the springform pan.
  7. Bake for 60-70 minutes until the center is set.
  8. Let cool to room temperature, then refrigerate for at least 4 hours before serving.

Notes

  • For a decoratively creamy topping, whip heavy cream and top the cheesecake before serving.
  • Serve with caramel sauce for added sweetness.
