Apple Mille Feuille with Vanilla Custard (gluten-free)

  • 4 large apples, thinly sliced
  • 1 cup gluten-free puff pastry
  • 2 cups milk
  • 1/2 cup sugar
  • 3 egg yolks
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Roll out the gluten-free puff pastry and cut into rectangles.
  3. Place the pastry on a baking sheet and bake until golden brown, about 15-20 minutes.
  4. In a saucepan, heat the milk and sugar until warm.
  5. In a bowl, whisk together egg yolks, cornstarch, and salt.
  6. Slowly add the warm milk into the egg mixture, stirring continuously.
  7. Pour the mixture back into the saucepan and cook over medium heat until thickened, about 5 minutes.
  8. Remove from heat and stir in vanilla extract.
  9. Assemble the Mille Feuille by layering the baked pastry with apple slices and custard.
  10. Chill before serving.
