Bacon Cheddar Gnocchi Soup

  • 6 strips bacon
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 pound potato gnocchi
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, cook the bacon over medium heat until crispy. Remove and crumble.
  2. In the bacon drippings, sauté onions until translucent, then add garlic and cook for another minute.
  3. Pour in chicken broth and bring to a simmer.
  4. Add gnocchi and cook until they float to the top.
  5. Reduce heat to low, then stir in heavy cream and cheddar cheese until melted.
  6. Season with salt and pepper, and stir in crumbled bacon before serving.
