  • 1/3 cup melted butter
  • 1 teaspoon baking soda

  • 3/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the bananas with a fork.
  3. Stir the melted butter into the mashed bananas.
  4. Mix in baking soda and salt.
  5. Add sugar, egg, and vanilla. Mix until well combined.
  6. Stir in the flour until just incorporated.
  7. In a separate bowl, combine brown sugar, cinnamon, and a bit of flour for the crumb topping.
  8. Transfer the muffin batter into muffin cups, sprinkle the crumb topping on each muffin.
  9. Bake for 20-25 minutes or until a toothpick comes out clean.

Notes
