Banana Oatmeal Muffins

Ingredients

  • 2 ripe bananas
  • 1 cup rolled oats
  • 1/2 cup yogurt
  • 1/4 cup honey
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mash the bananas and mix in the yogurt and honey.
  3. Add the oats, baking powder, baking soda, salt, and cinnamon. Stir until combined.
  4. If using, fold in the chopped nuts.
  5. Pour the mixture into muffin tins and bake for 20-25 minutes.
  6. Allow to cool before serving.

Notes

  • For best results, use overripe bananas.
  • These muffins freeze well.
