  • 1 cup rolled oats
  • 1/2 cup Greek yogurt
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Add oats, Greek yogurt, honey, and vanilla extract to the bowl and mix well.
  4. Sprinkle in baking powder, baking soda, salt, and cinnamon, then stir until fully combined.
  5. If using, fold in chocolate chips.
  6. Pour the batter into a greased muffin tin, filling each cup about 3/4 full.
  7. Bake for 15-20 minutes, or until a toothpick comes out clean.
  8. Let the muffins cool before removing from the tin.
