  • 1/2 cup cilantro
  • 1 jalapeño, seeded
  • 2 garlic cloves
  • 1 tablespoon lime juice

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a small bowl, mix olive oil, paprika, cumin, salt, and pepper.
  3. Rub the spice mixture all over the chicken.
  4. Place the chicken in a roasting pan and roast for about 1 hour and 15 minutes.
