Blueberry Cream Cheese Bars

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 package (8 oz) cream cheese, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups fresh blueberries

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a bowl, mix the flour, butter, and sugar until crumbly.
  3. Press half of the mixture into the bottom of the prepared baking dish.
  4. In a separate bowl, beat together the cream cheese, eggs, and vanilla until smooth.
  5. Pour the cream cheese mixture over the crust in the pan.
  6. Spread the blueberries over the cream cheese layer.
  7. Sprinkle the remaining crumb mixture on top.
  8. Bake for 30-35 minutes or until set and golden brown.
  9. Allow to cool before slicing into bars.

Notes

  • Feel free to substitute frozen blueberries if fresh ones are not available.
  • For a tangier flavor, add a little lemon zest to the cream cheese mixture.
