  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 cup cream cheese, softened
  • 1/4 cup unsalted butter, melted
  • 1/2 cup milk
  • 1 large egg
  • 1 cup fresh blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together the flour, sugar, salt, and baking powder.
  3. In another bowl, mix the cream cheese, butter, milk, and egg until smooth.
  4. Combine the wet ingredients with the dry ingredients until just mixed.
  5. Gently fold in the blueberries.
  6. Fill the muffin tins with the batter about 2/3 full.
  7. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  8. Allow to cool before serving.

Notes

  • For a sweeter muffin, add additional sugar.
  • Try using frozen blueberries if fresh ones are not available.
