  • 1 1/2 cups fresh blueberries
  • 1/2 cup brown sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, softened

Instructions

  1. Preheat your oven to 400°F (200°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together 2 cups of flour, 1 cup of sugar, 1 tablespoon of baking powder, and 1/2 teaspoon of salt.
  3. In another bowl, whisk together 1/2 cup of melted butter, 2 eggs, 1 cup of milk, and 1 teaspoon of vanilla extract.
  4. Combine the wet and dry ingredients until just mixed. Gently fold in 1 1/2 cups of blueberries.
  5. In a small bowl, mix 1/2 cup of brown sugar, 1/4 cup of flour, 1 teaspoon of cinnamon, and 1/4 cup of softened butter until crumbly.
  6. Fill the muffin cups three-quarters full with batter and sprinkle the crumb topping over each muffin.
  7. Bake for 20-25 minutes, or until a toothpick comes out clean.
  8. Let cool for a few minutes before serving.

Notes

  • For an extra burst of flavor, try adding lemon zest to the batter.
  • These muffins can also be frozen for up to 3 months.
