  • 1 pound chicken thighs
  • 1 can coconut milk
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 2 green onions, chopped
  • 1 tablespoon fresh cilantro, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a bowl, combine coconut milk, garlic, ginger, soy sauce, lime juice, salt, and black pepper.
  2. Place chicken thighs in a large ziplock bag and pour marinade over. Seal and marinate in the refrigerator for at least 1 hour.
  3. Preheat oven to 375°F (190°C).
  4. Transfer the chicken to a baking dish and pour the remaining marinade over the top.
  5. Bake for 25-30 minutes or until the chicken is cooked through and juices run clear.
  6. Garnish with green onions and cilantro before serving.
