Brazilian Coconut Chicken

  • 2 pounds chicken thighs
  • 1 can coconut milk
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt to taste
  • 1 tablespoon olive oil
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, garlic, and ginger, sauté until soft.
  2. Add chicken thighs and cook until browned on all sides.
  3. Stir in coconut milk, paprika, cumin, and salt. Bring to a simmer.
  4. Cover and cook for 30 minutes, until the chicken is cooked through.
  5. Stir in cilantro before serving.
