  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 inch ginger, grated
  • 2 tomatoes, chopped
  • 1 teaspoon turmeric powder
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1 cup coconut milk
  • fresh cilantro for garnish

Instructions

  1. Hard boil the eggs, then peel and set aside.
  2. In a pot, heat the vegetable oil over medium heat.
  3. Add the chopped onion and sauté until translucent.
  4. Stir in garlic and ginger, cooking for another minute.
  5. Add the chopped tomatoes, turmeric, chili powder, and salt. Cook until the tomatoes are soft.
  6. Pour in the coconut milk, bring to a simmer.
  7. Gently add the boiled eggs to the curry, simmer for 5 minutes.
