  • 1 pound chicken breast, diced
  • 2 cups orzo pasta
  • 1 tablespoon Cajun seasoning
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced chicken and cook until browned.
  2. Add the chopped onion, bell pepper, and garlic; sauté until the vegetables are soft.
  3. Stir in the Cajun seasoning, orzo, and chicken broth. Bring to a boil.
  4. Reduce heat and simmer until orzo is cooked and most of the liquid is absorbed.
  5. Stir in the heavy cream and Parmesan cheese until melted and creamy.
