  • 2 1/2 cups water
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 cucumber, julienned
  • 1 avocado, sliced
  • 8 ounces imitation crab meat, shredded
  • 2 tablespoons sesame seeds
  • 3 green onions, chopped

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. Combine sushi rice and water in a rice cooker or pot, and cook according to the manufacturer’s instructions.
  3. While the rice is cooking, mix rice vinegar, sugar, and salt in a small bowl until dissolved.
  4. Once the rice is cooked, transfer to a large bowl and gently fold in the vinegar mixture.
  5. Let the rice cool for about 10 minutes.
