1 cup graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
2 (8-ounce) packages cream cheese, softened
3/4 cup brown sugar
2 large eggs
1 teaspoon vanilla extract
2 cups diced apples
1/2 cup caramel sauce
Instructions
Preheat the oven to 325°F (163°C).
In a bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press mixture into the bottom of a greased baking pan.
In another bowl, beat together cream cheese and brown sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
Fold in diced apples and pour the mixture over the crust.
Bake for 45-50 minutes, or until set. Allow to cool completely.
Drizzle with caramel sauce before serving.
Notes
For extra flavor, add cinnamon to the cream cheese mixture.
Make sure the cream cheese is at room temperature for easier mixing.
