  • 1 tablespoon baking powder
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup milk
  • 1 cup blueberry jam
  • 1 cup fresh blueberries

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, cardamom, salt, and sugar.
  3. In another bowl, mix the melted butter, eggs, vanilla extract, and milk until combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the fresh blueberries.
  5. Evenly distribute half the batter into the muffin tin. Add a spoonful of blueberry jam to each muffin cup, then cover with the remaining batter.
  6. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let muffins cool in the tin for 5 minutes before transferring to a wire rack.
