  • 1 cup crushed pineapple, drained
  • 2 cups all-purpose flour
  • 2 cups sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 teaspoons baking powder

  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 16 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together grated carrots, crushed pineapple, oil, sugar, and eggs.
  3. In another bowl, combine flour, baking powder, baking soda, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Pour batter into prepared baking pans and smooth the top.
  6. Bake for 30-35 minutes, or until a toothpick comes out clean.
  7. While the layers cool, beat together cream cheese, powdered sugar, and vanilla until smooth.
  8. Once the cakes are completely cool, spread cream cheese mixture between the layers and on top.
  9. Chill in the refrigerator for at least 4 hours before serving.
