Cheesy Ranch Potatoes and Smoked Sausage

  • 4 cups diced potatoes
  • 1 pound smoked sausage
  • 1 packet ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine diced potatoes and olive oil. Toss to coat.
  3. Add ranch seasoning, garlic powder, salt, and pepper. Mix well.
  4. Spread the potatoes on a baking sheet in a single layer.
  5. Bake for 25-30 minutes or until golden brown and tender.
  6. While the potatoes are baking, slice the smoked sausage.
  7. In a skillet, cook the sausage over medium heat until browned.
  8. Remove the baking sheet from the oven, add the sausage on top of the potatoes, and sprinkle with cheese.
  9. Return to the oven and bake for an additional 5-10 minutes until the cheese is bubbly.
  10. Remove from the oven and top with sour cream before serving.
