Chicken and Potatoes with Dijon Cream Sauce

  • 4 chicken thighs
  • 2 cups baby potatoes
  • 1/2 cup heavy cream
  • 2 tablespoons Dijon mustard
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • salt to taste
  • pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil and brown the chicken thighs on both sides.
  3. Remove chicken and add onions and garlic to the skillet; sauté until softened.
  4. Add baby potatoes and stir in Dijon mustard, heavy cream, thyme, salt, and pepper.
  5. Return chicken to the skillet, cover, and bake for 30 minutes.
  6. Serve hot and enjoy!
