Chicken and Sweet Potato Bowls

Ingredients

  • 2 cups cooked chicken, shredded
  • 2 medium sweet potatoes, diced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 cups spinach or mixed greens
  • 1 avocado, sliced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the diced sweet potatoes with olive oil, paprika, garlic powder, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.
  4. In a separate pan, heat the shredded chicken until warm.
