Chicken Taco Casserole

A delicious and easy-to-make chicken taco casserole that brings a twist to your traditional comfort food.

Ingredients

  • 1 pound cooked shredded chicken
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 packet taco seasoning
  • 2 cups tortilla chips
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup salsa
  • 1 cup sour cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the shredded chicken, black beans, corn, taco seasoning, and salsa.
  3. In a baking dish, layer half of the tortilla chips, followed by half of the chicken mixture, and half of the cheese.
  4. Repeat the layers with the remaining chips, chicken mixture, and cheese.
  5. Cover with foil and bake for 20 minutes.
  6. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly.
  7. Serve with dollops of sour cream on top.

  • This casserole is great for meal prep and can be customized with your favorite toppings.
