- 1 pound cooked shredded chicken
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 packet taco seasoning
- 2 cups tortilla chips
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 cup salsa
- 1 cup sour cream
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix the shredded chicken, black beans, corn, taco seasoning, and salsa.
- In a baking dish, layer half of the tortilla chips, followed by half of the chicken mixture, and half of the cheese.
- Repeat the layers with the remaining chips, chicken mixture, and cheese.
- Cover with foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly.
- Serve with dollops of sour cream on top.
