Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs, one at a time, mixing well after each addition.
  4. Stir in the sour cream and vanilla extract until combined.
  5. In another bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. In a small bowl, mix the brown sugar and cinnamon for the topping.
  8. Fill each muffin cup halfway with batter, add a sprinkle of the brown sugar mixture, and then top with more batter.
  9. Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  10. Allow to cool for a few minutes before transferring to a wire rack to cool completely.
