Cottage Cheese Banana Muffins – Moist, High-Protein, Easy Breakfast

These Cottage Cheese Banana Muffins are moist, high in protein, and make for an easy breakfast option.

Ingredients

  • 1 cup cottage cheese
  • 2 ripe bananas
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/4 cup honey
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a bowl, mash the bananas and mix in the cottage cheese, eggs, and honey.
  3. In another bowl, combine the flour, oats, baking soda, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Pour the mixture into the prepared muffin tin and fill each cup about 2/3 full.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Allow to cool for a few minutes before removing from the tin.

Notes

  • For extra sweetness, you can add chocolate chips or nuts.
  • These muffins can be frozen for later enjoyment.
