- 1 cup cottage cheese
- 2 ripe bananas
- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/4 cup honey
- 2 eggs
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- Preheat the oven to 350°F (175°C) and grease a muffin tin.
- In a bowl, mash the bananas and mix in the cottage cheese, eggs, and honey.
- In another bowl, combine the flour, oats, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour the mixture into the prepared muffin tin and fill each cup about 2/3 full.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Allow to cool for a few minutes before removing from the tin.
