  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine cottage cheese, eggs, sugar, vegetable oil, and vanilla extract.
  3. In another bowl, whisk together flour, baking powder, and salt.
  4. Gradually mix the dry ingredients into the wet ingredients until just combined.
  5. Fold in the blueberries gently.
  6. Pour the batter into greased muffin tins, filling each cup about 2/3 full.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Allow to cool before serving.
