- 4 large russet potatoes
- 1 onion, diced
- 4 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1/2 cup turkey bacon, cooked and crumbled
- 1/2 cup shredded cheddar cheese
- 1/4 cup green onions, chopped
- Peel and chop the potatoes and add them to the Instant Pot.
- Add the onion, garlic, chicken broth, salt, pepper, and thyme.
- Seal the Instant Pot and set to high pressure for 15 minutes.
- Once done, perform a quick release and stir in the heavy cream.
- Use an immersion blender to blend the soup until smooth.
