Ingredients

  • 4 large russet potatoes
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 cup turkey bacon, cooked and crumbled
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup green onions, chopped

Instructions

  1. Peel and chop the potatoes and add them to the Instant Pot.
  2. Add the onion, garlic, chicken broth, salt, pepper, and thyme.
  3. Seal the Instant Pot and set to high pressure for 15 minutes.
  4. Once done, perform a quick release and stir in the heavy cream.
  5. Use an immersion blender to blend the soup until smooth.
  6. Top with turkey bacon, cheddar cheese, and green onions before serving.

Notes

  • For a vegan version, substitute heavy cream with coconut milk and use vegetable broth.
