  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (28 ounces) diced tomatoes
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 cups tortilla chips
  • 1 cup avocado, diced
  • 1 cup cilantro, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and garlic; sauté until translucent.
  3. Stir in cumin and chili powder; cook for another minute.
  4. Add black beans, corn, diced tomatoes, and vegetable broth; bring to a boil.
  5. Reduce heat, add heavy cream, and simmer for 10 minutes.
  6. Serve hot, topped with tortilla chips, avocado, and cilantro.

Notes

  • To make it spicier, add diced jalapeños.
  • For a vegan version, substitute heavy cream with coconut cream.
