Crock Pot Crack Potato Soup

  • 2 pounds potatoes, diced
  • 1 cup chopped onion
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup chopped green onions

Instructions

  1. In a crock pot, combine the diced potatoes, chopped onion, minced garlic, and chicken broth.
  2. Cover and cook on low for 7-8 hours or high for 4-5 hours, until the potatoes are tender.
  3. Puree the soup using an immersion blender until smooth.
  4. Stir in heavy cream, salt, and black pepper.
  5. Top with shredded cheddar cheese, crumbled bacon, and chopped green onions before serving.

Notes

  • For a thicker soup, use less chicken broth.
