Crunchy Thai Peanut & Quinoa Salad

A vibrant and nutritious salad combining the rich flavors of Thai peanut sauce with the wholesome goodness of quinoa.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup shredded carrots
  • 1 red bell pepper, diced
  • 1 cup chopped cucumber
  • 1/2 cup chopped green onions
  • 1/4 cup chopped fresh cilantro
  • 1/3 cup creamy peanut butter
  • 1 tablespoon soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 clove garlic, minced
  • 1/4 teaspoon red pepper flakes

Instructions

  1. Rinse quinoa under cold water. In a pot, bring water to a boil, add quinoa, reduce heat, cover, and simmer for 15 minutes.
  2. In a large bowl, combine cooked quinoa, carrots, bell pepper, cucumber, green onions, and cilantro.
  3. In a separate bowl, whisk together peanut butter, soy sauce, lime juice, honey, garlic, and red pepper flakes.
  4. Pour the peanut dressing over the salad and toss to combine.
  5. Serve chilled or at room temperature.

Notes

  • For added crunch, you can sprinkle some chopped peanuts on top before serving.
  • This salad can be made ahead of time and stored in the refrigerator for a few days.
