Easy Apple Crisp Mini Cheesecakes You Need to Try This Fall!

Delicious and easy mini cheesecakes topped with crispy apple crumble, perfect for fall.

Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup sugar
  • 1/2 cup melted butter
  • 16 ounces cream cheese
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3 apples, peeled and diced
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup oats
  • 1/4 cup flour

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and butter until combined.
  3. Press the mixture into the bottom of mini cheesecake pans.
  4. In another bowl, beat cream cheese and brown sugar until smooth.
  5. Add eggs and vanilla, mixing until well combined.
  6. Pour the cream cheese mixture over the crusts.
  7. In a separate bowl, combine diced apples, cinnamon, nutmeg, oats, and flour.
  8. Spoon the apple mixture over the cream cheese layer.
  9. Bake for 25-30 minutes or until set.
  10. Allow to cool before serving.

Notes

  • For extra flavor, add caramel sauce on top before serving.
  • These can be made a day in advance and stored in the fridge.
