Easy Asian Cucumber Salad

A light and refreshing salad that combines the crunch of cucumbers with a tangy dressing, perfect for any meal.

Ingredients

  • 2 large cucumbers
  • 1 tablespoon salt
  • 3 tablespoons rice vinegar
  • 2 tablespoons sugar
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 2 green onions, finely chopped
  • 1 teaspoon sesame seeds

Instructions

  1. Slice the cucumbers thinly and place them in a bowl.
  2. Sprinkle salt over the cucumbers and let them sit for 10 minutes to draw out moisture.
  3. In a separate bowl, whisk together rice vinegar, sugar, soy sauce, and sesame oil until sugar dissolves.
  4. Rinse the cucumbers under cold water and drain well.
  5. Toss the cucumbers with the dressing and add the chopped green onions.
  6. Garnish with sesame seeds before serving.
