Easy Baked Salmon Sushi Cups

A delicious and simple recipe for baked salmon sushi cups that are perfect for a healthy dinner option.

  • 1 cup sushi rice
  • 1 pound salmon fillet
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 avocado, sliced
  • 1 cucumber, diced
  • 4 nori sheets
  • 2 tablespoons green onions, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook sushi rice according to the package instructions.
  3. In a bowl, mix the salmon with soy sauce and sesame oil, then place it in a baking dish.
  4. Bake the salmon for 20 minutes or until fully cooked.
  5. Once the rice is ready, press it into the bottom of muffin tins to form cups.
  6. After the salmon is cooked, flake it and place it into the rice cups.
  7. Top with avocado slices, diced cucumber, and sprinkle with green onions.

Notes

  • Make sure the rice is sticky enough to hold the shape in the muffin tin.
