Easy Chocolate Chip Banana Bread Muffins

Deliciously moist and easy to make, these chocolate chip banana bread muffins are perfect for breakfast or a snack!

Ingredients

  • 3 ripe bananas
  • 1/3 cup melted butter
  • 1/2 cup sugar
  • 1 beaten egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a mixing bowl, mash the ripe bananas with a fork.
  3. Stir in the melted butter.
  4. Add in the sugar, beaten egg, and vanilla extract and mix well.
  5. Sprinkle the baking soda and salt over the mixture and mix in.
  6. Add the flour and mix until just incorporated.
  7. Fold in the chocolate chips.
  8. Pour the batter into the muffin tin, filling each cup about 2/3 full.
  9. Bake for 18-20 minutes or until a toothpick comes out clean.
  10. Let cool for a few minutes before transferring to a wire rack.

Notes

  • For extra flavor, add walnuts or pecans.
  • These muffins can also be frozen for later use.
