A delightful take on the classic Ratatouille, adding turkey bacon and chicken ham for extra flavor.

  • 2 medium zucchini
  • 1 large eggplant
  • 1 bell pepper (any color)
  • 1 cup chopped tomatoes
  • 4 strips turkey bacon
  • 1 cup diced chicken ham
  • 2 cloves garlic, minced
  • 1 teaspoon dried herbs (thyme, basil)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Chop all vegetables into small cubes.
  3. In a large skillet, heat olive oil over medium heat and add the garlic, turkey bacon, and chicken ham, cooking until fragrant.
  4. Add the chopped vegetables and herbs to the skillet, seasoning with salt and pepper.
  5. Cook for about 5-7 minutes until the vegetables are slightly tender.
  6. Transfer the mixture to a baking dish and bake in the oven for 25-30 minutes until everything is cooked through.
  7. Serve warm as a side dish or main course.
