  • 1 medium eggplant
  • 1 large bell pepper
  • 1 cup chopped tomatoes
  • 4 slices turkey bacon
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Chop the zucchini, eggplant, and bell pepper into bite-sized pieces.
  3. In a large skillet, cook the turkey bacon until crispy, then remove and crumble.
  4. Add olive oil to the skillet and sauté the chopped vegetables until softened.
  5. Stir in the chopped tomatoes, thyme, salt, and black pepper.
  6. Mix in the crumbled turkey bacon.
