  • 4 bell peppers
  • 1 cup cooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup salsa
  • 1 cup shredded cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a bowl, mix cooked rice, black beans, corn, cumin, chili powder, and salsa.
  4. Stuff the mixture into the bell peppers and place them in a baking dish.
  5. Top with shredded cheese.
