Eggs Benedict Casserole

A delightful twist on the classic Eggs Benedict, featuring turkey bacon and chicken ham.

  • 8 eggs
  • 2 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Dijon mustard
  • 8 slices turkey bacon
  • 1 cup cooked chicken ham, diced
  • 6 English muffins, toasted and cubed
  • 1 cup shredded cheese
  • 1 tablespoon fresh chives, chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the eggs, milk, salt, pepper, and Dijon mustard until well combined.
  3. Add the toasted English muffin cubes, turkey bacon, chicken ham, and half of the cheese to the egg mixture. Stir gently to combine.
  4. Pour the mixture into a greased baking dish and top with the remaining cheese.
  5. Bake in the preheated oven for 30-35 minutes or until the casserole is set and golden brown on top.
  6. Let it cool for a few minutes before garnishing with fresh chives and serving.

Notes

  • For added flavor, try using a blend of cheeses or adding spinach.
  • Make sure to allow the casserole to rest before cutting for cleaner slices.
