Feta & Cranberry Rigatoni Salad with Lemon Vinaigrette

Ingredients

  • 12 ounces rigatoni
  • 1 cup feta cheese, crumbled
  • 1 cup dried cranberries
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup olive oil
  • 1/4 cup lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Cook rigatoni according to package instructions. Drain and cool.
  2. In a large bowl, combine the cooled rigatoni, feta, cranberries, cherry tomatoes, red onion, and parsley.
  3. In a separate bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Serve immediately or refrigerate for 30 minutes before serving to let the flavors meld.
