French Onion Chicken Orzo Casserole

  • 1 cup orzo pasta
  • 2 cups beef broth
  • 1 cup French onion soup
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat the olive oil over medium heat and sauté the diced chicken until browned.
  3. Add the garlic powder, onion powder, salt, and pepper; stir to combine.
  4. In a large mixing bowl, combine the sautéed chicken, orzo pasta, beef broth, French onion soup, and half of the mozzarella cheese.
  5. Transfer the mixture to a greased baking dish and top with the remaining mozzarella cheese.
  6. Bake for 25-30 minutes or until the orzo is cooked and the cheese is bubbly and golden.
