Gingerbread Muffins

  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 1/2 cup molasses
  • 2 large eggs
  • 1/2 cup milk

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together the flour, baking soda, ginger, cinnamon, nutmeg, and salt.
  3. In another bowl, beat the butter and brown sugar until creamy. Add molasses and eggs, mixing until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with milk, until smooth.
  5. Divide the batter into the muffin tins, filling each about 2/3 full.
  6. Bake for 18-20 minutes, or until a toothpick comes out clean.
  7. Let cool in the pan for a few minutes, then transfer to a wire rack.

Notes

  • For extra flavor, you can add chopped nuts or chocolate chips.
  • Serve warm with butter for a delicious treat.
