  • ½ cup brown sugar, packed
  • ½ cup molasses
  • 1 large egg
  • ½ cup vegetable oil
  • ¾ cup hot water

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, baking soda, ginger, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk the brown sugar, molasses, egg, and oil until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, alternating with hot water. Mix until just combined.
  5. Pour the batter into the prepared muffin tin, filling each cup about two-thirds full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cool for a few minutes before transferring to a wire rack.
