Healthy Banana Oatmeal Muffins

  • 2 ripe bananas
  • 1 cup rolled oats
  • 1/2 cup almond milk
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mash the ripe bananas with a fork.
  3. Add the rolled oats, almond milk, honey or maple syrup, vanilla extract, baking powder, baking soda, cinnamon, and salt. Mix until well combined.
  4. If desired, fold in the chopped nuts or chocolate chips.
  5. Pour the batter into the prepared muffin tin, filling each cup about 3/4 full.
  6. Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • These muffins can be stored in an airtight container for up to 5 days.
  • They can also be frozen for up to 3 months.
