Healthy Carrot Cake Oatmeal Cookies

These Healthy Carrot Cake Oatmeal Cookies are a delicious guilt-free treat that combines the flavors of traditional carrot cake with the wholesome goodness of oats.

Ingredients

  • 1 cup rolled oats
  • 1 cup grated carrots
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup raisins or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the rolled oats, grated carrots, almond flour, cinnamon, nutmeg, baking soda, and salt.
  3. In another bowl, combine the honey (or maple syrup) and applesauce.
  4. Pour the wet ingredients into the dry ingredients and mix until well combined. If desired, fold in the raisins or walnuts.
  5. Drop tablespoons of the cookie dough onto a baking sheet lined with parchment paper.
  6. Bake for 12-15 minutes, or until the edges are lightly golden.
  7. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For a vegan option, substitute honey with maple syrup.
  • Store in an airtight container for up to a week.
