Healthy Carrot Cake Oatmeal Cookies

These Healthy Carrot Cake Oatmeal Cookies are a delightful treat that combines the flavors of traditional carrot cake with the wholesome goodness of oatmeal. Perfect for a nutritious snack or a guilt-free dessert!

Ingredients

  • 1 cup rolled oats
  • 1 cup grated carrots
  • 1/2 cup whole wheat flour
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup raisins or walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the rolled oats, grated carrots, whole wheat flour, honey or maple syrup, baking powder, ground cinnamon, and salt. Mix until well combined.
  3. If using, fold in raisins or walnuts.
  4. Drop spoonfuls of the mixture onto the prepared baking sheet, leaving space between each cookie.
  5. Bake for 12-15 minutes or until the edges are golden.
  6. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes
