- 1 cup rolled oats
- 1 cup grated carrots
- 1/2 cup whole wheat flour
- 1/4 cup honey or maple syrup
- 1/2 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/4 cup raisins or walnuts (optional)
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the rolled oats, grated carrots, whole wheat flour, honey or maple syrup, baking powder, ground cinnamon, and salt. Mix until well combined.
- If using, fold in raisins or walnuts.
- Drop spoonfuls of the mixture onto the prepared baking sheet, leaving space between each cookie.
- Bake for 12-15 minutes or until the edges are golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
