  • 2 cups cooked shredded chicken
  • 1 cup queso cheese
  • 8 corn tortillas
  • 1 cup enchilada sauce
  • 1 cup black beans, drained and rinsed
  • 1/2 cup chopped cilantro
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, combine the shredded chicken, queso cheese, black beans, and half the cilantro.
  3. Warm tortillas in a skillet for easier folding, then fill each with the chicken mixture.
  4. Roll up the tortillas and place them seam-side down in a baking dish.
  5. Pour enchilada sauce over the top and sprinkle remaining queso cheese.
  6. Bake for 20 minutes until cheese is bubbly.
