  • 1/3 cup melted butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 3/4 cup sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 cup rolled oats
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin.
  2. In a mixing bowl, mash the bananas until smooth.
  3. Mix in melted butter, egg, and vanilla extract until well combined.
  4. Add baking soda and salt, then stir in sugar.
  5. Fold in flour and oats gradually until just combined.
  6. In a small bowl, mix brown sugar and cinnamon for the streusel topping.
  7. Pour muffin batter into the prepared tin and sprinkle with the streusel mixture.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Let cool for a few minutes before transferring to a wire rack.
