- 2 cups sushi rice
- 1 pound imitation crab (kani)
- 1 tablespoon mayonnaise
- 1 teaspoon Sriracha
- 1 avocado
- 4 sheets of nori
- 1 cucumber
- soy sauce for serving
- Rinse the sushi rice under cold water until the water runs clear.
- Cook the sushi rice according to the package instructions.
- While the rice is cooking, mix the imitation crab with mayonnaise and Sriracha in a bowl.
- Once the rice is done, let it cool for a few minutes.
- Lay a sheet of nori on a bamboo mat, spread a thin layer of rice over the nori, leaving some space at the top.
- Place a line of the crab mixture, avocado slices, and cucumber strips in the center.
- Roll the sushi tightly, using the mat to help, and seal the edge with a bit of water.
- Slice the roll into bite-sized pieces and serve with soy sauce.
Notes
- For extra spice, add more Sriracha to the crab mixture.
- Be careful not to overfill the roll.
