  • 1/2 cup buttermilk

  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • 1 cup fresh blueberries
  • 1/4 cup streusel topping

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with liners.
  2. In a large bowl, whisk together the flour, sugar, baking soda, baking powder, and salt.
  3. In another bowl, whisk together the buttermilk, vegetable oil, egg, vanilla extract, and lemon zest.
  4. Pour the wet ingredients into the dry ingredients and fold until just combined. Gently fold in the blueberries.
  5. Scoop the batter into the prepared muffin tin and sprinkle with streusel topping.
  6. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  7. Let muffins cool for a few minutes before transferring them to a wire rack to cool completely.
